Buckwheat Pancakes at yoga forme

  • 1 cup organic buckwheat flour
  • 1/2 cup arrowroot aka tapioca powder
  • ¼  cup organic raw sugar OR date puree
  • ¼ cup vegetable oil OR coconut oil
  • ¼ teaspoon salt
  • 1 teaspoons cinnamon
  • 1 tablespoons vanilla essence
  • 1.5 heaped teaspoons baking powder
  • 1 cup water

Place all the dry ingredients in a bowl. Add in the wet ingredients and mix with a stick mixer (immersion mixer) to make a smooth pancake batter. Use a 1/3 cup scoop to pour some batter onto a nonstick frying pan and cook on moderate heat until bubbles form and pop and the edges begin to firm. Using a flat spatula, gently flip the pancake over and cook on the other side for a minute or two. Serve with natural maple syrup, fresh coconut yogurt and seasonal fruit. A squeeze of lemon is great as well.

You alter slightly to use this as an excellent base to make wraps

Use your base mix of buckwheat, tapioca, baking powder, salt, and oil > place in a high speed blender


For wraps add an extra ¼ cup of water with a handful of spinach or ¼ cup carrot juice or ¼ cup beetroot juice or maybe have them plain with ¼ cup of water and add some heat with chilli or cumin seeds -  Wraps are delicious with hummus, onion marmalade and fresh veges or maybe bake off slices of kumera, fresh beans and kale chips.  Yumminess in a wrap
